Every once in a while I like to peel a potato and eat it raw with salt.

I was hooked on raw carrots, myself. I insisted on having one before bed each and every night until I was at least 8 or 9.

I love raw carrots. Sometimes with peanut butter (though you have to dry off the carrot first) and sometimes with mustard. Lately with ranch dip. Some days peeled, some days not. With salt.
